Pesto Mac n Cheese
Oh thank goodness it’s cooled off, I can imagine cooking again. Speaking of cooking, the recipe this week was submitted by one of my old neighbors Nino. She has two little boys under the age of ten, and the youngest, Joel, LOVES mac and cheese. So it’s mac and cheese night at her house pretty often. One night, to (literally) spice things up, she added some pesto to her recipe and voila! Pesto mac and cheese! It was a big hit, and now she makes it about once a week.
A note from the chef, feel free to use other cheeses in the recipe as well. One of my coworkers swears by using ½ american cheese and ½ munster in her mac and cheese, but as a kid, I used to pour leftover cheese fondue (made with gruyere and emmentaler) on everything.
Ingredients
2 cups medium shell pasta
1 tbs. butter
½ cup heavy cream
1 cup shredded white cheddar cheese
½ cup shredded parmesan cheese
1-2 tbsp Vegetaball’s Pesto
Salt and pepper to taste
Boil and salt your water, add pasta. Boil until pasta is cooked. Drain and put back into the pot off the heat. Add butter and mix. Add heavy cream and mix. Add cheese and mix until melted. Add pesto, mix, salt and pepper to taste. Serve!
