Caprese Salad
This classic recipe was submitted by our pesto princess, Callaway. Callaway’s been in and out of our kitchen, spending as much time making Vegetaball’s as her school work allows, for four years now. She knows you can put pesto on almost ANYTHING, but her classic favorites are grilled cheese sandwiches, eggs, and this caprese salad. I use a simple balsamic vinegar in my preparation, but Callaway insists a balsamic glaze is the way to go.
Ingredients
Fresh Tomato
1 lb fresh mozzarella
Vegetaball’s Pesto
Extra Virgin Olive Oil
Balsamic Glaze
Cut your tomato into thin wedges. Cut the mozzarella balls in half, or if you have a log, into ¼ inch thin slices. Spread Vegetaball’s pesto onto one side of the mozzarella. Arrange on a plate in a circle alternating tomato and mozzarella, pesto side up. Drizzle with olive oil and balsamic glaze.
