Pesto Polenta Lasagna

A quick and easy flavorful meal put together in 10 minutes

Ingredients:

1 (18 ounce) package polenta, cut into ¼ inch thick slices

½ (24 ounce) jar bottles marinara sauce

¼ cup Vegetaball’s Pesto

¼ cup pine nuts

1 cup shredded mozzarella cheese


Directions:

  1. Preheat the oven to 365 degrees F. Oil an 11x7x2 inch baking dish.

  2. Arrange a single layer of polenta in the bottom of the prepared baking dish. Spread a thin layer of Vegetaball’s Pesto over the polenta. Spoon half of the marinara sauce over the top. Top with another layer of polenta and marinara sauce.

  3. Bake, uncovered, for 25 minutes. Turn on the broiler. Top the dish with shredded cheese and pine nuts, then broil until cheese browns and nuts are toasted.
