Creamy Pesto Haddock

Ingredients

6 slices of haddock (or other firm white fish)

juice of 1/2 a lemon

white pepper, salt

4 oz. softened cream cheese

4 oz. Vegetaball’s Pesto

1/4 c. grated Parmesan

1/4 c. bread crumbs


Preheat oven to 400∘

Butter a 9” by 13” pan. Place fish in pan and sprinkle with lemon juice. Season with white pepper and salt.

Combine cream cheese and pesto and spread on haddock.

Mix parmesan and bread crumbs and sprinkle over pesto.

Bake 10 minutes of until it flakes easily with a fork.

Serves six.
